Instructions

  1. Brown the butter: Melt butter in a large skillet over medium heat, stirring constantly until it turns golden amber and smells nutty (5-7 minutes). Pour into a heatproof bowl and cool for 10 minutes.
  2. Mix wet ingredients: In a large bowl, beat the cooled brown butter, brown sugar, and granulated sugar on medium-high speed for 2 minutes until light and fluffy. Add egg, egg yolk, and vanilla; beat until combined.
  3. Add pumpkin: Beat in the pumpkin puree on low speed until just combined.
  4. Whisk dry ingredients: In a separate medium bowl, whisk together flour, baking soda, baking powder, cream of tartar, salt, cinnamon, ginger, and nutmeg.
  5. Combine: Gradually add dry ingredients to wet ingredients on low speed, mixing only until no flour streaks remain.
  6. Chill dough: Cover and refrigerate dough for at least 30 minutes (or up to 24 hours).
  7. Prepare coating: Mix ½ cup granulated sugar, 1 tablespoon cinnamon, and 1 teaspoon pumpkin pie spice in a small bowl.
