  • 3 tbsp (45ml) Extra Virgin Olive Oil
  • 1 tsp (5g) Garlic Powder
  • 1/2 tsp (2.5g) Smoked Paprika
  • 1 tsp (6g) Kosher Salt
  • 1/2 tsp (1g) Black Pepper
  • 2 tbsp (2g) Fresh Parsley, chopped (optional)
  • 2 tbsp (10g) Grated Parmesan Cheese (optional)

Instructions

  1. Wash potatoes (do not peel) and place them in a large pot of cold, salted water.
  2. Bring to a boil over high heat, then reduce to a simmer. Cook for 12-15 minutes until tender enough to pierce easily with a fork.
  3. Preheat oven to 425°F (220°C). Line a standard half-sheet baking pan with parchment paper.
  4. Drain the potatoes well and let them sit in a colander for 2-3 minutes to steam off excess moisture.
  5. Place potatoes on the prepared baking sheet. Gently press each potato flat with a muddler or heavy glass to about 1/2 inch thickness.
  6. Brush the tops generously with olive oil. Sprinkle with garlic powder, smoked paprika, salt, and pepper.
  7. Bake for 8-10 minutes until edges are golden brown and crispy. For extra crunch, broil for the last 2 minutes, watching closely.
  8. Remove from oven and immediately sprinkle with fresh parsley and grated Parmesan if using.

Notes

Ensure potatoes are dry before smashing to maximize crispiness. Use uniform potato sizes for even cooking. Do not microwave leftovers as it makes them soggy; reheat in oven or air fryer.
