Chewy Oatmeal Raisin Cookies: Easy Classic Homemade Recipe

  • Author: Miranda
  • Total Time: 32 minutes
  • Yield: 24 cookies 1x

Description

These classic chewy oatmeal raisin cookies feature crisp edges, a soft center, and plump raisins. Made with simple pantry ingredients and a crucial chilling step for the perfect texture.

Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened to room temperature
  • 1/2 cup (100g) granulated white sugar
  • 1 cup (220g) packed light brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 3 cups (270g) old-fashioned rolled oats
  • 1 1/2 cups (225g) raisins

Instructions

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together on medium speed for 2-3 minutes until light, fluffy, and pale.
  3. Add eggs one at a time, beating well after each addition. Scrape down the sides of the bowl. Add vanilla extract and mix until combined.
  4. In a separate medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients. Mix on low speed until just combined. Do not overmix.
  6. Switch to a silicone spatula and gently fold in the rolled oats and raisins until evenly distributed.
  7. Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes (or up to 24 hours).
  8. Scoop dough onto prepared baking sheets, leaving about 2 inches between mounds.
  9. Bake for 10-12 minutes, or until edges are golden brown but centers still look slightly soft.
  10. Let cookies sit on the baking sheet for 5 minutes to set, then transfer to a wire rack to cool completely.

Notes

Chilling the dough is essential for preventing excessive spreading and developing flavor. Do not overbake; cookies continue to cook on the hot pan. For gluten-free version, use certified gluten-free oats and flour. For vegan version, use vegan butter and flax eggs.
