  • Author: Miranda
  • Total Time: 30 minutes
  • Yield: 12 servings 1x

Description

A creamy, spicy, and cheesy buffalo chicken dip that is perfect for tailgating, parties, or weeknight comfort food. This easy-to-make appetizer feeds a crowd and can be prepared ahead of time.

Ingredients

Scale
  • 3 cups cooked chicken, shredded (about 450g)
  • 8 ounces cream cheese, softened
  • ½ cup buffalo style hot sauce (e.g., Frank’s RedHot)
  • ½ cup mayonnaise
  • 2 cups shredded sharp cheddar cheese, divided
  • ½ cup ranch dressing
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 34 stalks green onions, sliced
  • ½ cup blue cheese crumbles (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Shred the cooked chicken and ensure it is thoroughly drained and dry to prevent a watery dip.
  3. Cut the softened cream cheese into cubes. If using canned chicken, drain and press out excess moisture with paper towels.
  4. In a large mixing bowl, combine the softened cream cheese, buffalo sauce, mayonnaise, ranch dressing, garlic powder, and onion powder. Mix until smooth and creamy.
  5. Fold in the shredded chicken and 1½ cups of the shredded cheddar cheese until evenly distributed.
  6. Transfer the mixture to a 9×9 inch baking dish and spread evenly.
  7. Sprinkle the remaining ½ cup of cheddar cheese (and blue cheese crumbles, if using) over the top.
  8. Bake for 15-20 minutes until the cheese is melted, bubbly, and slightly golden.
  9. Let rest for 5 minutes to thicken slightly.
  10. Garnish with sliced green onions and serve immediately with chips or vegetables.

Notes

Ensure cream cheese is softened to room temperature to avoid lumps. Drain chicken thoroughly to maintain dip thickness. Pre-shredded cheese contains anti-caking agents that prevent smooth melting, so shred cheese from a block if possible. This dip can be made ahead and refrigerated for up to 24 hours before baking.
