A creamy, comforting, and easy-to-make white chicken chili that comes together in about 30 minutes using pantry staples like rotisserie chicken, cannellini beans, and cream cheese.

- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 2 cups shredded rotisserie chicken
- 2 cans (15 oz each) cannellini beans, drained and rinsed
- 4 cups chicken broth (low-sodium)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- 1 can (4 oz) diced green chiles
- 8 oz block cream cheese (full-fat), cubed
- 2 tablespoons fresh lime juice
- Salt and black pepper to taste
- Optional: ½ cup heavy cream, ½ cup chopped cilantro, 1 minced jalapeño, 1 sliced avocado, 1 cup shredded cheese, tortilla chips
Instructions
- Prep ingredients: Chop onion, mince garlic, shred chicken, and drain/rinse beans and chiles.
- Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook for 2-3 minutes until softened.
- Add minced garlic and cook for 1 minute, stirring constantly, until fragrant but not browned.
- Add cumin, chili powder, and dried oregano. Stir and cook for 30 seconds to toast the spices.
- Pour in chicken broth, cannellini beans, and green chiles. Stir to combine and scrape up any bits from the bottom.
- Bring to a boil, then reduce heat to low and simmer for 10 minutes to meld flavors.
- Add shredded chicken and cubed cream cheese. Stir gently over low heat or off heat until cream cheese is completely melted and broth is smooth.
- Remove from heat and stir in lime juice. Season with salt and pepper to taste.
- Ladle into bowls and serve with desired toppings like cilantro, avocado, cheese, and tortilla chips.
Notes
Use block cream cheese, not spreadable, for best texture. Add cream cheese off heat or on very low heat to prevent graininess. If chili is too thick, add a splash of broth. This recipe is naturally gluten-free but check spice labels. It does not freeze well due to the dairy.
