Description
A fast, 20-minute weeknight dinner featuring crispy chicken cubes coated in a sweet, spicy, and savory honey-sriracha glaze. This recipe uses simple pantry staples for a global flavor adventure that rivals takeout.
Ingredients
- 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
- 2 tbsp cornstarch
- 1 tbsp vegetable oil (or neutral oil like canola/avocado)
- 2 tbsp sriracha sauce
- 3 tbsp raw honey
- 2 tbsp soy sauce
- 3 cloves garlic, minced
- 2 green onions, sliced
- 1 tsp toasted sesame seeds
Instructions
- Pat chicken cubes completely dry with paper towels to ensure crispiness.
- Place dried chicken in a bowl, sprinkle with cornstarch, and toss until lightly coated. Shake off excess.
- Heat vegetable oil in a large skillet over medium-high heat until shimmering.
- Add chicken in a single layer (cook in batches if necessary) and sear for 2 minutes without moving to form a crust.
- Flip chicken and cook for another 2-3 minutes until internal temperature reaches 165°F. Remove chicken to a plate, leaving oil in the pan.
- Reduce heat to medium. In the skillet or a small saucepan, combine honey, sriracha, soy sauce, and minced garlic.
- Whisk constantly until the sauce bubbles and thickens, coating the back of a spoon (about 2 minutes). Add a teaspoon of water if too thick.
- Return chicken to the skillet with the sauce. Toss gently to coat evenly and cook for 1-2 minutes to meld flavors.
- Remove from heat and garnish with sliced green onions and toasted sesame seeds.
- Serve immediately.
Notes
Patting the chicken dry is crucial for a crispy crust. Do not overcrowd the pan or the chicken will steam instead of sear. The sauce can be made separately in a saucepan or directly in the skillet. For extra crunch, you can sear the chicken again for 30 seconds after tossing in the sauce. This recipe does not freeze well due to the cornstarch coating becoming mushy.
