A vibrant, refreshing, and visually stunning non-alcoholic summer drink that balances tart raspberries with sweet peach nectar and sparkling water. It’s easy to make in under 10 minutes and perfect for parties or relaxing evenings.


Ingredients

  • 1 cup fresh or frozen raspberries (150g)
  • ½ cup granulated sugar (100g)
  • ½ cup water (120ml)
  • 1 tablespoon lemon juice (15ml)
  • 1 teaspoon lemon zest
  • 1 cup peach nectar (240ml)
  • 2 cups sparkling water or club soda (500ml)
  • Ice cubes
  • Extra raspberries for garnish
  • Mint leaves (optional)

Instructions

  1. Combine raspberries, sugar, water, lemon juice, and lemon zest in a small saucepan.
  2. Mash the berries gently with a wooden spoon to release their juices.
  3. Bring the mixture to a boil over medium-high heat, then reduce heat to low and simmer for 5-7 minutes until the berries break down and the mixture thickens slightly.
  4. Remove from heat and let cool for 5 minutes.
  5. Strain the mixture through a fine-mesh sieve into a bowl, pressing on solids to extract liquid. Discard seeds and pulp.
  6. Let the syrup cool completely to room temperature (or refrigerate until cold).
  7. Fill highball glasses with ice cubes.
  8. Add 2 tablespoons of raspberry syrup and ¼ cup of peach nectar to each glass.
  9. Top with sparkling water, pouring slowly down the side of the glass to preserve bubbles.
  10. Gently stir to mix, then garnish with fresh raspberries and/or mint leaves.
  11. Serve immediately.

Notes

For best results, use cold ingredients to maintain carbonation. The raspberry syrup can be made ahead and stored in the fridge for up to 2 weeks. If using frozen raspberries, allow extra time for them to thaw and soften during simmering. To reduce sugar, use less syrup or a zero-calorie sweetener, though the texture may vary. For an alcoholic version, add 1.5 oz of vodka or gin.
