  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground black pepper
  • ½ teaspoon salt
  • ½ cup (100g) granulated sugar (for rolling)
  • Coarse sugar or turbinado sugar (optional, for extra crunch)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, beat softened butter, granulated sugar, and brown sugar together until light and fluffy (2-3 minutes).
  3. Add the egg and beat until combined. Add molasses and corn syrup, mixing until smooth and glossy.
  4. In a separate medium bowl, whisk together flour, baking soda, baking powder, ginger, cinnamon, cloves, nutmeg, black pepper, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Cover the bowl and refrigerate dough for at least 15 minutes (or up to 24 hours).
  7. Place ½ cup granulated sugar in a shallow bowl. Scoop 1.5 tablespoons of dough, roll into a ball, and coat thoroughly in sugar.
  8. Place dough balls on prepared baking sheets, about 2 inches apart.
  9. Bake for 10-12 minutes, until edges are set but centers look soft and puffy.
