Chewy, sweet coconut macaroons with crisp edges and a soft center, dipped in smooth semi-sweet chocolate. These easy-to-make treats are perfect for holidays, potlucks, or a quick dessert.

- 3 large egg whites (about 90g)
- ¾ cup granulated sugar (150g)
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract
- ¼ teaspoon salt
- 14 ounces shredded sweetened coconut (396g)
- 1 cup semi-sweet chocolate chips (170g)
- 1 tablespoon coconut oil
- Flaky sea salt (optional, for topping)
Instructions
- Preheat oven to 325°F (165°C) and line two baking sheets with parchment paper.
- In a stand mixer or hand mixer, beat egg whites on medium-high speed until soft peaks form.
- With mixer running on medium, slowly add granulated sugar in a steady stream. Add vanilla, almond extract, and salt. Beat on high for 2-3 minutes until glossy and stiff peaks form.
- Turn off mixer and gently fold in shredded coconut using a rubber spatula until coated.
- Drop mounds of mixture onto prepared baking sheets, spacing 2 inches apart. Yield approximately 15-18 macaroons.
- Bake for 15-20 minutes until edges are golden brown and tops are set.
- Cool on baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
- Microwave chocolate chips and coconut oil in 30-second intervals, stirring between each, until smooth.
- Dip cooled macaroons into melted chocolate, let excess drip off, and place back on parchment.
- Sprinkle with flaky sea salt if desired. Let chocolate set at room temperature for 30 minutes or in fridge for 15 minutes.
Notes
Use sweetened shredded coconut for best texture; unsweetened will make cookies dry. Ensure egg whites are completely free of yolk or oil to whip properly. Do not underbake or macaroons will be gummy. Macaroons taste better after sitting in the fridge for a day.
