  • 2 cups (200g) sharp cheddar cheese, freshly shredded
  • 1/2 cup (120ml) whole milk
  • 4 oz (115g) diced green chiles, drained
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin

Instructions

  1. Place a medium saucepan over medium-high heat. Crumble the chorizo into the pan and cook for about 5 minutes, breaking it into small pieces, until browned with crispy edges. Drain excess grease if necessary, leaving a little for flavor.
  2. Reduce heat to medium-low. Sprinkle in the garlic powder and cumin. Stir constantly for 30 seconds to 1 minute to toast the spices without burning them.
  3. Pour in the milk and stir to combine with the chorizo and spices. Gradually add the shredded cheddar cheese, a handful at a time, stirring gently but continuously until the cheese is fully melted and the sauce is smooth (about 3 minutes). Adjust consistency with more milk if too thick or simmering if too thin.
  4. Drain the diced green chiles thoroughly and fold them into the cheese mixture. Turn off the heat. Taste and adjust seasoning if needed.
  5. Serve immediately while hot and gooey.

Notes

Do not use pre-shredded cheese as the anti-caking agents can make the dip grainy. Shred your own block of cheddar for the best texture. This dip does not freeze well; store leftovers in the fridge for up to 3 days and reheat gently on the stove with a splash of milk to restore creaminess. Control heat by choosing mild or spicy chorizo and adjusting the amount of green chile juices.
