Instructions

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. Mix 1/4 cup sugar and 1 tablespoon cinnamon in a shallow bowl for the coating.
  3. In a large bowl, beat softened butter and 3/4 cup granulated sugar until light and fluffy (2-3 minutes). Scrape down sides.
  4. Add pumpkin puree, egg, and vanilla extract. Beat on medium speed until combined.
  5. In a separate bowl, whisk together flour, cream of tartar, baking soda, salt, 1 teaspoon cinnamon, and nutmeg.
  6. Gradually add dry ingredients to wet ingredients. Mix on low speed until just combined. Do not overmix.
  7. Scoop tablespoon-sized portions of dough and roll into balls. Roll each ball in the cinnamon sugar mixture to coat.
  8. Place dough balls on prepared baking sheets, spacing them 2 inches apart.
