  • ½ cup (100g) granulated sugar
  • 2 tablespoons (30ml) lemon juice
  • 2 tablespoons (15g) cornstarch
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 ½ cups (190g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons (25g) granulated sugar
  • ½ cup (115g) unsalted butter, cold and cubed
  • ¾ cup (180ml) buttermilk
  • 2 tablespoons (30g) melted butter, for brushing

Instructions

  1. Preheat oven to 375°F (190°C).
  2. If using fresh peaches, boil for 30 seconds, plunge into ice water, and peel. Chop peaches into 1-inch chunks.
  3. In a 9×9-inch baking dish, toss peaches with ½ cup sugar, lemon juice, cornstarch, cinnamon, and nutmeg. Let sit while making the topping.
  4. In a medium bowl, whisk together flour, baking powder, salt, and 2 tablespoons sugar.
  5. Cut in the cold, cubed butter using a fork or pastry cutter until the mixture resembles coarse crumbs with pea-sized butter chunks.
  6. Pour in buttermilk and stir gently with a wooden spoon or spatula until the dough just comes together (do not overmix).
  7. Drop spoonfuls of biscuit dough over the peaches, covering completely or leaving some gaps.
  8. Brush the tops of the biscuits with melted butter.
  9. Bake for 40-45 minutes until the topping is deep golden brown and peaches are bubbling vigorously.
  10. Let cool for at least 15 minutes before serving to allow filling to thicken. Serve warm with ice cream or whipped cream.

Notes

Keep butter cold for flaky biscuits. Do not overmix the dough. Let the cobbler cool for 15 minutes before serving to prevent a soupy texture. Can be made with frozen or canned peaches (drain well). Leftovers store in the fridge for up to 4 days; do not freeze as the topping becomes mushy.
