A simple, forgiving banana bread recipe designed for kids to help make. Using just one bowl, this moist and flavorful bread is perfect for family bonding and requires minimal cleanup.

- 3 medium ripe bananas (~1.5 cups mashed)
- 1 ½ cups all-purpose flour (190g)
- 1 teaspoon baking soda (5g)
- ½ teaspoon salt (3g)
- ¾ cup granulated sugar (150g) (mix of ½ cup white and ¼ cup brown)
- ⅓ cup vegetable oil (80ml)
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup optional add-ins (chocolate chips, walnuts, or blueberries)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- Peel bananas and place them in a large mixing bowl. Mash with a fork until mostly smooth with a few lumps.
- Add vegetable oil, eggs, and vanilla extract to the mashed bananas. Stir until combined.
- Add flour, sugar, baking soda, and salt to the wet ingredients. Stir until just combined; do not overmix.
- Gently fold in optional add-ins like chocolate chips or nuts.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.
Notes
Use very ripe bananas for best flavor. Do not overmix the batter to avoid tough bread. Let the bread cool completely before slicing to prevent it from falling apart. Can be frozen for up to 3 months.
