Instructions

- Add pumpkin puree, vegetable oil, eggs, and vanilla extract to the bananas. Whisk until well combined.
- In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cardamom.
- Gradually add dry ingredients to wet ingredients, stirring gently with a spatula until just combined. Do not overmix.
- Fold in optional add-ins like nuts or chocolate chips.
- Pour batter evenly into prepared loaf pans.
