  • 2 lbs waxy potatoes (Yukon Gold or red), scrubbed and cut into 1-inch cubes
  • 6 slices thick-cut bacon, diced
  • 1 medium yellow onion, diced
  • 1/4 cup apple cider vinegar
  • 1/2 cup low-sodium chicken broth
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • 2 tbsp fresh chives, chopped
  • Sugar (optional, to balance vinegar)

Instructions

  1. Place potato cubes in a saucepan, cover with cold water by an inch, and add a generous pinch of salt. Bring to a boil, then simmer for 8-10 minutes until tender but not mushy. Drain in a colander (do not rinse) and set aside.
  2. In the same saucepan or a skillet, cook diced bacon over medium heat until golden brown and crispy (3-4 minutes). Remove bacon with a slotted spoon, leaving the grease in the pan.
  3. Reduce heat to medium-low and add diced onion to the bacon grease. Sauté for 2-3 minutes until soft and translucent.
  4. Whisk together chicken broth, apple cider vinegar, Dijon mustard, salt, pepper, and sugar (if using). Pour this mixture into the pan with the onions and bacon grease. Stir constantly for 30 seconds until glossy and slightly reduced.
  5. Pour the hot dressing over the drained potatoes. Gently toss to coat. Fold in half of the crispy bacon. Taste and adjust seasoning while warm.
  6. Transfer to a serving bowl, top with remaining bacon and fresh chives, and serve warm.

Notes

Use waxy potatoes like Yukon Golds or red potatoes; avoid russets as they will fall apart. Serve the salad warm so the dressing penetrates the potatoes. The salad tastes even better the next day as flavors meld. Do not freeze, as potatoes become grainy.
