These easy no-bake granola bars are the perfect back-to-school snack. They are sturdy enough for lunchboxes, require zero oven time, and come together in minutes with just five simple ingredients.

- 3 cups (270g) old-fashioned rolled oats
- 1 cup (250g) natural creamy peanut butter (or sunflower seed butter)
- 1/2 cup (170g) honey
- 1 cup (170g) dark or semi-sweet chocolate chips
- 1/2 teaspoon fine sea salt
- 1 teaspoon vanilla extract
Instructions
- Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large mixing bowl, combine the rolled oats and any additional dry mix-ins (like seeds or dried fruit).
- In a microwave-safe bowl, combine the peanut butter and honey. Microwave on high for 30-45 seconds until warm and fluid. Stir until smooth.
- Pour the warm peanut butter and honey mixture over the oats. Add the vanilla extract and salt.
- Stir vigorously with a spatula until every oat is coated. Gently fold in the chocolate chips.
- Transfer the mixture to the prepared pan. Press down firmly and evenly using the back of a spoon or a measuring cup to ensure the bars hold together.
- Refrigerate for at least 30 minutes (or freeze for 15 minutes) until firm.
- Lift the bars out of the pan using the parchment paper overhang and cut into 12 squares or rectangles.
Notes
Do not use instant or quick oats as they will turn mushy. Ensure the peanut butter is warmed before mixing to ensure a smooth binding. Press the mixture firmly into the pan to prevent crumbling. Store in an airtight container at room temperature for up to one week.
