Ingredients

  • 4 large boneless, skinless chicken breasts (about 2 lbs / 900g)
  • 2 tablespoons olive oil
  • ½ cup sun-dried tomatoes packed in oil, chopped (approx. 2 oz / 55g)
  • 4 cloves fresh garlic, minced
  • ½ tsp red pepper flakes
  • 1 cup heavy cream (240ml)
  • ½ cup low-sodium chicken broth (120ml)
  • 1 tsp dried Italian seasoning
  • ½ cup freshly grated Parmesan cheese (about 2 oz / 55g)
  • Salt and black pepper to taste

Instructions

  1. Pat chicken breasts dry and season generously with salt and pepper. Pound to an even ½-inch thickness.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown and cooked through (165°F). Remove to a plate and tent with foil.
  3. Reduce heat to medium. Add sun-dried tomatoes (with oil) to the pan and sizzle for 1 minute. Add garlic and red pepper flakes, cooking for 30-60 seconds until fragrant.
  4. Pour in heavy cream and chicken broth, scraping up browned bits from the bottom of the pan. Simmer gently for 2-3 minutes until slightly thickened. Stir in Italian seasoning.
  5. Reduce heat to low. Whisk in Parmesan cheese until melted and smooth. Taste and adjust seasoning with salt and pepper.
  6. Return chicken to the pan, nestling it into the sauce. Heat through for 1 minute. Serve immediately with extra sauce.

Notes

Do not overcrowd the pan when searing chicken to ensure a good crust. Use low-sodium broth as sun-dried tomatoes and Parmesan are salty. If the sauce is too thin, simmer longer; if too thick, add more broth or cream. For a dairy-free version, swap heavy cream for coconut cream and Parmesan for nutritional yeast.
