A quick, one-pan weeknight dinner featuring seared chicken breasts in a luxurious, creamy sun-dried tomato and Parmesan sauce. It feels fancy but takes only 30 minutes to make.

- 4 large boneless, skinless chicken breasts (about 2 lbs / 900g)
- 2 tablespoons olive oil
- ½ cup sun-dried tomatoes packed in oil, chopped (approx. 2 oz / 55g)
- 4 cloves fresh garlic, minced
- ½ tsp red pepper flakes
- 1 cup heavy cream (240ml)
- ½ cup low-sodium chicken broth (120ml)
- 1 tsp dried Italian seasoning
- ½ cup freshly grated Parmesan cheese (about 2 oz / 55g)
- Salt and black pepper to taste
Instructions
- Pat chicken breasts dry and season generously with salt and pepper. Pound to an even ½-inch thickness.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown and cooked through (165°F). Remove to a plate and tent with foil.
- Reduce heat to medium. Add sun-dried tomatoes (with oil) to the pan and sizzle for 1 minute. Add garlic and red pepper flakes, cooking for 30-60 seconds until fragrant.
- Pour in heavy cream and chicken broth, scraping up browned bits from the bottom of the pan. Simmer gently for 2-3 minutes until slightly thickened. Stir in Italian seasoning.
- Reduce heat to low. Whisk in Parmesan cheese until melted and smooth. Taste and adjust seasoning with salt and pepper.
- Return chicken to the pan, nestling it into the sauce. Heat through for 1 minute. Serve immediately with extra sauce.
Notes
Do not overcrowd the pan when searing chicken to ensure a good crust. Use low-sodium broth as sun-dried tomatoes and Parmesan are salty. If the sauce is too thin, simmer longer; if too thick, add more broth or cream. For a dairy-free version, swap heavy cream for coconut cream and Parmesan for nutritional yeast.
