Description
A creamy, high-protein comfort food soup made with Yukon Gold potatoes, navy beans, and cheddar cheese that comes together in just 30 minutes.

- 3 lbs Yukon Gold potatoes, scrubbed and cut into 1/2-inch cubes
- 4 tbsp unsalted butter
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 can (15 oz) navy beans, drained and rinsed
- 8 oz cream cheese, softened
- 1.5 cups sharp cheddar cheese, shredded
- 6–8 slices bacon, cooked and crumbled
- 1 cup full-fat plain Greek yogurt or sour cream
- 4–5 stalks green onions, sliced
- Salt and black pepper to taste
Instructions
- Wash and cube the potatoes, placing them in cold water to prevent browning.
- In a large Dutch oven, melt butter over medium heat. Add diced onion and a pinch of salt, cooking for 4-5 minutes until translucent. Add garlic and cook for 1 minute until fragrant.
- Add drained potatoes, chicken broth, and navy beans to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes until potatoes are tender.
- Remove pot from heat. Mash about half of the potatoes directly in the pot to thicken the soup naturally.
- Stir in softened cream cheese, shredded cheddar, and Greek yogurt (or sour cream) over low heat until melted and smooth. Do not boil after adding dairy.
- Season with salt and black pepper to taste.
- Ladle soup into bowls and top with crumbled bacon, sliced green onions, and extra cheddar cheese. Serve immediately.
Notes
For freezing, leave out the cream cheese and yogurt. Freeze the base soup for up to 3 months and stir in fresh dairy when reheating. Use room temperature cream cheese to prevent lumps. If the soup is too thick, add more broth or milk.
