A stress-free, make-ahead breakfast that kids love to help prepare. These overnight oats combine creamy peanut butter, ripe bananas, and oats for a nutritious, pudding-like texture that requires zero cooking.
Ingredients
- 1/2 cup old-fashioned rolled oats
- 2 tbsp creamy peanut butter
- 1 medium ripe banana
- 3/4 cup milk (dairy or non-dairy)
- 1 tsp chia seeds
- 1 tbsp maple syrup or honey
- 1/4 tsp cinnamon
- 1 pinch salt
Instructions
- Peel the banana and mash it in a small bowl until mostly smooth with a few small lumps.
- Add the rolled oats, chia seeds, cinnamon, and salt to the bowl with the mashed banana. Mix gently to coat the oats.
- Pour in the milk and maple syrup. Add the creamy peanut butter.
- Stir vigorously until the peanut butter is mostly dissolved and incorporated into the liquid.
- Divide the mixture evenly into glass jars with lids. Wipe the rims clean.
- Seal the jars and refrigerate for at least 6 hours, ideally overnight.
- Give the oats a good stir before serving cold. Add toppings like granola or extra banana slices if desired.
Notes
Use old-fashioned rolled oats, not instant or steel-cut, for the best texture. Ensure the banana is ripe for natural sweetness. Stir the peanut butter well before adding to prevent clumping. This recipe can be made nut-free by swapping peanut butter for sunflower seed butter. Do not freeze, as the texture will become mushy.
