Description
A refreshing, electric summer drink made with fresh watermelon, mint, and lime. It’s simple to blend, customizable in sweetness, and perfect for hot days or parties.

- 4 cups cubed fresh watermelon (about 600g)
- 1/2 cup packed fresh mint leaves (spearmint or peppermint)
- 2 tablespoons fresh lime juice
- 1 cup ice cubes
- 1–2 tablespoons simple syrup, honey, or agave nectar (optional, to taste)
- 1/2 cup sparkling water or soda water (optional)
- Pinch of sea salt
Instructions
- Wash the watermelon, cut off the rind, and cube the red flesh into rough chunks to yield about 4 cups.
- Add the watermelon chunks, fresh mint leaves, lime juice, and chosen sweetener to a high-speed blender.
- Blend on high for 30-45 seconds until the mixture is completely smooth and vibrant pink.
- Taste the mixture and adjust sweetness or tartness by adding more sweetener or lime juice as needed.
- For a smoothie-like consistency, add 1 cup of ice cubes and blend again until smooth. For a lighter juice, skip the extra ice.
- Fill tall glasses with ice and pour the watermelon-mint mixture over the ice.
- If using, top with sparkling water for fizz.
- Garnish with a sprig of fresh mint and a thin slice of lime. Serve immediately.
Notes
Choose a watermelon that feels heavy for its size with a creamy yellow spot on the bottom. If your blender isn’t powerful, muddle the mint with lime juice first. You can make the base up to 24 hours in advance and store it in the fridge. For a slushy texture, use frozen watermelon chunks instead of ice.
