Ingredients

  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tbsp (15g) baking powder
  • 1/2 tsp (3g) salt
  • 1/2 cup (113g) unsalted butter, cold and cubed
  • 1/2 cup (120ml) heavy cream
  • 2 cups (480ml) heavy whipping cream, cold
  • 2 tbsp (15g) confectioners’ sugar (optional)

Instructions

  1. Wash and hull strawberries, then chop into bite-sized pieces. Place in a large bowl and sprinkle with granulated sugar and lemon juice. Toss gently and let sit for at least 20 minutes to create syrup.
  2. In a separate large bowl, whisk together flour, baking powder, and salt until no lumps remain.
  3. Add cold, cubed butter to the flour mixture. Use a pastry cutter or fork to work the butter into the flour until it resembles coarse crumbs with pea-sized butter chunks.
  4. Drizzle heavy cream over the flour-butter mixture. Stir gently until the dough just comes together. It should be soft but hold its shape.
  5. Turn dough onto a lightly floured surface and pat to 1-inch thickness. Cut out rounds with a cookie cutter. Gather scraps and repeat to make 12-14 biscuits.
  6. Split biscuits in half horizontally. Place bottom half in a bowl, spoon generous amounts of strawberry mixture and syrup over it, add a dollop of whipped cream, and top with the other biscuit half and more cream.
  7. Serve immediately.

Notes

Keep all ingredients cold for best texture. Do not skip the resting time for the berries to ensure syrup formation. If biscuits are dense, you likely overmixed the dough. For whipped cream, stop when soft peaks form to avoid turning into butter.
