Grilled Peach Burrata Salad

Description

A quick, elegant 15-minute dinner featuring caramelized grilled peaches, creamy burrata cheese, fresh basil, and balsamic glaze. Perfect for busy weeknights when you need something light yet satisfying.


Ingredients

  • 4 medium ripe peaches (800g), halved and pitted
  • 1 ball fresh burrata cheese (78 oz / 200-225g)
  • 1 large handful fresh basil (15g), torn by hand
  • 2 tbsp balsamic glaze
  • 2 tbsp extra virgin olive oil
  • Black pepper, to taste
  • Flaky sea salt, to taste

Instructions

  1. Wash and pat the peaches dry. Slice each peach in half and remove the pit.
  2. Brush both cut sides of the peaches lightly with olive oil.
  3. Heat a grill pan or skillet over medium-high heat.
  4. Place peaches cut-side down on the hot pan. Do not touch for 2-3 minutes until edges char and juices bubble.
  5. Flip peaches and grill for another 1-2 minutes until warm and tender but holding shape. Remove to a plate.
  6. Tear fresh basil into a large serving bowl.
  7. Arrange grilled peach halves on top of the basil.
  8. Cut the burrata ball in half and place gently on top of the peaches.
  9. Drizzle generously with balsamic glaze.
  10. Finish with a crack of black pepper and a pinch of flaky sea salt.
  11. Serve immediately.

Notes

Use ripe but firm peaches that smell sweet. Do not overcook the peaches or they will turn to mush. Let burrata sit at room temperature for 15 minutes before serving for better texture. This dish is best served immediately as the burrata separates and peaches get soggy if stored.
