Description
A refreshing, naturally gluten-free summer appetizer combining sweet watermelon, salty feta, and a bright mint-lime drizzle. This recipe is ready in under 15 minutes and requires no cooking.

- 2 lbs watermelon, cubed (seedless preferred)
- 4 oz feta cheese, cubed
- 1/4 cup fresh mint leaves, packed
- 2 medium limes, juiced (approx. 1/3 cup)
- 1 tbsp honey or agave nectar
- 1 tsp extra virgin olive oil
Instructions
- Wash the watermelon, slice off the rind, and cut the flesh into 3/4 to 1-inch cubes. Pat the cubes dry with a paper towel to remove excess moisture.
- Cube the feta cheese into pieces roughly the same size as the watermelon cubes. Keep chilled until ready to use.
- In a small bowl, whisk together the lime juice, honey (or agave), and olive oil until the honey is dissolved.
- Stack the mint leaves, roll them up, and slice into thin strips (chiffonade). Stir the chopped mint into the lime mixture and let it sit for a minute to infuse.
- Thread a cube of watermelon, a cube of feta, and a mint leaf onto a toothpick or skewer. Repeat in an alternating pattern, leaving a little space between ingredients.
- Arrange skewers on a serving platter and drizzle generously with the mint-lime mixture just before serving.
Notes
Keep all ingredients cold for the best texture. Pat watermelon dry to prevent the drizzle from sliding off. Do not drizzle until right before serving to keep the mint fresh and prevent the watermelon from becoming soggy. Can be assembled up to 2 hours ahead, but do not add the drizzle until serving time.
