  • 1 teaspoon pumpkin pie spice (divided)
  • 1/4 teaspoon fine sea salt
  • Optional: 1/2 cup chopped pecans, 1/4 cup white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish with butter or cooking spray.
  2. In a medium bowl, whisk together pumpkin puree, brown sugar, heavy cream, egg, and half of the pumpkin pie spice until smooth and well combined.
  3. Pour the pumpkin mixture into the prepared baking dish and spread evenly with a spatula.
  4. In a small bowl, mix oats, flour, remaining pumpkin pie spice, and salt.
  5. Pour melted butter over the oat mixture and stir with a fork until it resembles coarse sand and oats are evenly coated.
