Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, pumpkin pie spice, cinnamon, ginger, and nutmeg.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar on medium-high speed for 3-4 minutes until light and fluffy.
- Add the egg and vanilla extract, beating until combined. Mix in the pumpkin puree until just incorporated.
- Gradually add the dry ingredients to the wet mixture on low speed, mixing only until no streaks of flour remain.
- Cover the bowl and refrigerate the dough for at least 1 hour (or freeze for 30 minutes if short on time).
- Scoop the dough into 2-tablespoon balls and roll them in granulated sugar if desired.
- Place dough balls 2 inches apart on the prepared baking sheets.
- Bake for 10-12 minutes, or until edges are set and lightly golden but centers still look slightly soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Use 100% pure pumpkin puree, not pumpkin pie filling. Spoon and level flour to avoid dry cookies. Do not overbake; cookies will firm up as they cool. Store in an airtight container with a slice of bread to maintain softness.
