Description
A cozy, seasonal iced coffee drink featuring a rich cold brew base topped with a creamy pumpkin spice and salted caramel mixture. It offers the taste of a pumpkin spice latte with customizable sweetness and a fraction of the cost.
Ingredients
- 1 cup (85g) coarse-ground coffee beans
- 4 cups (950ml) cold, filtered water
- ½ cup (120ml) heavy cream
- ½ cup (120ml) milk of choice (whole milk, oat milk, or almond milk)
- 2 tablespoons (30g) pumpkin puree
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 3–4 tablespoons salted caramel sauce
- Pinch of flaky sea salt
Instructions
- Combine coarse-ground coffee and cold water in a large jar or pitcher. Stir gently to saturate grounds.
- Cover tightly and refrigerate for 12-24 hours (18 hours is recommended for balance).
- Strain the mixture through a coffee filter or nut milk bag into a clean container, discarding the grounds.
- In a small bowl, whisk together heavy cream, milk, pumpkin puree, pumpkin pie spice, vanilla extract, and a pinch of sea salt until smooth.
- Fill a glass with ice cubes.
- Pour cold brew over the ice, leaving about an inch of space at the top.
- Drizzle salted caramel sauce inside the glass and on top of the ice for swirling layers.
- Slowly pour the pumpkin cream mixture over the back of a spoon to float it on top.
- Garnish with a drizzle of caramel and a pinch of flaky sea salt. Serve immediately.
Notes
Use coarse-ground coffee to avoid bitterness. Ensure all ingredients are cold to prevent the cream from separating. The cold brew concentrate can be stored in the fridge for up to 2 weeks. The pumpkin cream is best made fresh but can be prepped the night before if covered.
