Description
A homemade pumpkin spice latte made with real pumpkin puree, fresh spices, and a simple syrup. This cozy fall drink is customizable, cheaper than coffee shop versions, and ready in about 15 minutes.

- 1 cup (240g) 100% pure pumpkin puree
- ½ cup (100g) light brown sugar
- 2 tablespoons (30ml) heavy cream
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger
- 1 teaspoon pure vanilla extract
- ½ cup (120ml) water
- 2 cups (480ml) strong dark roast coffee
- 2 cups (480ml) milk (whole milk or oat milk recommended)
- Whipped cream (optional, for topping)
- Extra spices for garnish (cinnamon or nutmeg)
Instructions
- In a small saucepan, combine pumpkin puree, brown sugar, heavy cream, water, cinnamon, nutmeg, ginger, and vanilla extract. Whisk until smooth.
- Place the saucepan over medium heat and stir constantly until the mixture reaches a gentle simmer.
- Reduce heat to low and simmer for 5-7 minutes, stirring frequently, until the syrup thickens slightly and becomes glossy. Remove from heat and let cool slightly.
- While the syrup simmers, brew strong coffee using a French press, drip maker, or espresso machine.
- Heat milk in a microwave-safe jug or small saucepan until hot but not boiling.
- Froth the hot milk using a handheld frother or by pumping a French press plunger until creamy foam forms.
- Add a generous tablespoon or two of pumpkin spice syrup to each mug.
- Pour in the hot coffee and stir to combine.
- Slowly pour the frothed milk over the coffee, spooning remaining foam on top.
- Top with whipped cream and a sprinkle of extra spices if desired. Serve immediately.
Notes
Use 100% pure pumpkin puree, not pumpkin pie filling. Ensure spices are fresh for best flavor. Do not boil the syrup to prevent bitterness. Oat milk is recommended for the best foam texture if making a dairy-free version. Syrup can be stored in the fridge for up to one week.
