Description

  • 15.25 oz (432g) boxed yellow or vanilla cake mix
  • 3 large eggs, room temperature
  • 1 cup (245g) 100% pure pumpkin puree
  • 1/2 cup (120ml) vegetable oil
  • 2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 8 oz (225g) light cream cheese
  • 1 cup (120g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and grease lightly.
  2. In a large bowl, combine cake mix, eggs, pumpkin puree, oil, pumpkin pie spice, and salt. Beat on medium speed for 2 minutes until smooth.
  3. Pour batter into prepared pan and spread evenly. Bake for 12-15 minutes until edges pull away and cake springs back to touch.
  4. While cake bakes, lay a clean kitchen towel on counter and dust generously with powdered sugar.
  5. As soon as cake comes out of oven, loosen edges with a knife and invert onto the towel. Peel off parchment.
  6. Roll the cake up tightly with the towel inside, starting from the short end. Let cool completely in this rolled position for about 1 hour.
  7. In a medium bowl, beat light cream cheese, powdered sugar, vanilla, and cinnamon until smooth and creamy.
  8. Once cake is cool, gently unroll it. Spread filling evenly over surface, leaving a 1/2-inch border on long edges.
  9. Carefully roll the cake up again starting from the same short end. Wrap tightly in plastic wrap and refrigerate for at least 2 hours or overnight.
  10. Unwrap, dust with powdered sugar, and slice into 1-inch pieces with a sharp knife.

Notes

Roll the cake while it is still hot to prevent cracking. Use light cream cheese for a softer filling that is easier to spread. Chill the roll for at least 2 hours before slicing to ensure clean cuts.
