Instructions

  1. Preheat oven to 425°F (220°C). Line a 12-cup muffin pan with paper liners and lightly spray with oil.
  2. In a large bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt.
  3. In another bowl, whisk melted butter, brown sugar, and eggs until smooth. Add pumpkin puree, buttermilk, and 1 tsp vanilla; whisk until combined.
  4. Pour wet ingredients into dry ingredients. Gently fold with a spatula until just combined; do not overmix.
  5. In a small bowl, beat cream cheese, 2 tbsp sugar, and 1 tsp vanilla until smooth and creamy.
  6. Divide batter evenly among muffin cups, filling each 2/3 full. Dollop a tablespoon of cream cheese mixture on top of each.
  7. Swirl cream cheese into batter with a knife or skewer.
  8. Bake at 425°F for 5 minutes. Without opening the door, reduce temperature to 350°F (175°C) and bake for another 13-15 minutes (total 18-20 minutes).
  9. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
