  • 2 medium sweet potatoes (about 1 lb / 450g), peeled and diced into half-inch cubes
  • 2 medium Honeycrisp apples (about 1 lb / 450g), peeled and diced
  • 1 cup butternut squash cubes (about 6 oz / 170g)
  • 1 cup fresh green beans (about 4 oz / 115g), trimmed
  • 2 cups fresh spinach or chopped kale (about 2 oz / 55g)
  • 3 cloves garlic, minced
  • 1 tbsp fresh sage, chopped (or 1 tsp dried sage)
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 tbsp balsamic vinegar

Instructions

  1. Prep ingredients: Dice sweet potatoes and apples into half-inch cubes, trim green beans, mince garlic, and chop sage.
  2. Pat chicken thighs dry and season both sides with salt, pepper, and smoked paprika.
  3. Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs undisturbed for 4-5 minutes until golden, then flip and cook for another 3-4 minutes until internal temperature reaches 165°F. Remove chicken to a plate.
  4. Reduce heat to medium. Add sweet potatoes and butternut squash to the same skillet. Cook for 8-10 minutes, stirring occasionally, until softening and getting golden edges. Add a splash of water if dry.
  5. Add diced apples, minced garlic, and chopped sage to the skillet. Stir and cook for 2-3 minutes until garlic is fragrant and apples are tender.
  6. Return chicken to the skillet. Add green beans and spinach (or kale). Pour in balsamic vinegar.
  7. Gently stir to combine, allowing greens to wilt (about 1 minute for spinach). Taste and adjust seasoning with salt or pepper.
  8. Serve immediately, optionally topped with fresh parsley, chives, or a dollop of Greek yogurt.

Notes

Use chicken thighs for juiciness; breasts can dry out. Ensure uniform cuts for even cooking. Fresh sage is preferred over dried. If using frozen green beans, add them in the last 5 minutes. The dish does not freeze well due to apples becoming mushy. Reheats well in the fridge for up to 4 days.
