Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 loaf pan and line the bottom with parchment paper for easy removal.
  2. In a large bowl, whisk together the pumpkin puree, vegetable oil, eggs, and granulated sugar until smooth and uniform.
  3. In a separate medium bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice to ensure even distribution.
  4. Pour the dry ingredients into the wet ingredients. Gently fold them together with a rubber spatula until just combined. Do not overmix; a few lumps are fine.
