  • 1.5 lbs Beef Sirloin Steak, cut into 1-inch cubes
  • 2 large Russet Potatoes (approx. 1.5 lbs), cut into 1-inch cubes
  • 4 tbsp Unsalted Butter
  • 5 cloves Garlic, minced
  • 1 tbsp Fresh Thyme leaves (or 1 tsp dried)
  • 2 tbsp High-Smoke Point Oil (Avocado or Canola)
  • 1 tbsp Soy Sauce
  • Salt and Black Pepper to taste

Instructions

  1. Prep the potatoes by peeling or scrubbing, cutting into 1-inch cubes, rinsing in cold water, and patting very dry. Toss with 1 tbsp oil, salt, and pepper.
  2. Heat a large cast iron skillet or heavy-bottomed pan over medium-high heat with 1 tbsp oil. Add potatoes in a single layer (cook in batches if necessary). Cook undisturbed for 4 minutes to form a crust, flip, and cook another 4 minutes until golden and fork-tender. Remove to a plate.
  3. Pat steak cubes dry and toss with 1 tbsp oil, 1 tsp salt, 1/2 tsp pepper, and 1 tbsp soy sauce.
  4. Heat the same skillet over high heat until almost smoking. Add steak in a single layer. Do not touch for 2 minutes to develop a crust, then flip and cook another 2 minutes. Remove to the plate with potatoes.
  5. Reduce heat to medium. Add 4 tbsp butter to the pan. Once melted and foaming, add minced garlic and thyme. Cook for 30 seconds until fragrant.
  6. Return potatoes and steak to the pan. Toss everything together for 1 minute to coat in the sauce. Taste and adjust salt.

Notes

Do not crowd the pan to ensure proper searing and crispiness. Pat ingredients dry before cooking to prevent steaming. For a spicy kick, add red pepper flakes with the garlic. This recipe is naturally gluten-free if you use tamari instead of soy sauce.
