  • 1 packet taco seasoning (approx. 1 oz / 28g)
  • 1.5 cups medium salsa (chunky style)
  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 2 cups sharp cheddar cheese, shredded (from a block)
  • 2 cups plain tortilla chips, crushed
  • 2 stalks green onions, sliced (for garnish)
  • Sour cream (for serving)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat a large skillet over medium-high heat. Add ground beef and break into small crumbles. Cook for 5-7 minutes until no longer pink.
  3. Drain excess grease, leaving about a tablespoon for flavor.
  4. Sprinkle taco seasoning over the beef and stir for 30 seconds. Pour in salsa and simmer for 1-2 minutes until the mixture is moist and thickened.
  5. Drain and rinse black beans thoroughly to remove excess water.
  6. In a 9×13 baking dish, combine the beef mixture, drained beans, and half of the shredded cheese. Stir to combine.
  7. Crush tortilla chips by hand to create a mix of crumbs and chunks. Sprinkle evenly over the beef mixture.
  8. Top with the remaining shredded cheese.
  9. Bake for 15-20 minutes until cheese is melted and bubbly and edges are golden.
  10. Remove from oven and let rest for 5 minutes to allow the casserole to set.
  11. Garnish with sliced green onions and serve with sour cream.

Notes

Do not skip the resting time; cutting into it immediately will make it soupy. Ensure beans are drained thoroughly to prevent a watery casserole. Use block cheese and grate it yourself for better melting. Tortilla chips may get soft if stored; reheat in oven or air fryer to restore crispness. Do not freeze as chips become mushy.
