  • 8 oz full-fat cream cheese, cut into cubes (225g)
  • 1/2 cup Frank’s RedHot Original hot sauce (120ml)
  • 1 cup shredded mozzarella cheese (115g)
  • 1/2 cup creamy ranch dressing (120ml)
  • 1/4 cup blue cheese crumbles (30g)
  • 2 tbsp unsalted butter (30g)

Instructions

  1. Shred the rotisserie chicken if not already done, ensuring you have about 2 cups. Cut the block of cream cheese into 8 equal cubes to ensure even melting.
  2. Place cream cheese cubes in a microwave-safe bowl. Microwave on high for 30 seconds, stir, then microwave for another 30 seconds and stir again. Repeat until mostly melted but still slightly lumpy (about 1.5-2 minutes total). Alternatively, melt cream cheese and butter in a small saucepan over low heat until smooth.
  3. Stir in the hot sauce and ranch dressing vigorously until the mixture is smooth and emulsified.
  4. Fold in the shredded chicken and half of the mozzarella cheese. Sprinkle the remaining mozzarella and blue cheese crumbles on top.
  5. Microwave for 1 minute on high, then stir. If not fully melted, microwave in 30-second bursts. Let the dip sit for 2 minutes to thicken slightly before serving.

Notes

Use full-fat block cream cheese, not tub spread, for best texture. Let cream cheese soften slightly before melting. If the dip becomes greasy, it was overheated; whisk in a tablespoon of cold water or milk to rescue the emulsion. Serve with celery sticks, carrot sticks, or tortilla chips.
