A comforting, self-care drink made with roasted pumpkin, real spices, and your choice of milk. This latte offers a deep, earthy flavor without artificial aftertastes, perfect for winding down on a rainy day.

- 1 cup (240g) roasted pumpkin puree
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 2 cups (480ml) milk of choice (whole, oat, almond, or coconut)
- 2–3 tbsp maple syrup
- 1/2 cup (120ml) strong brewed coffee or espresso
- Whipped cream (optional)
- Pinch of cinnamon for topping (optional)
Instructions
- Roast a small sugar pumpkin at 400°F (200°C) for 25-30 minutes until soft. Let cool, scoop out flesh, and blend until smooth to create 1 cup of puree.
- In a small saucepan over medium-low heat, combine the pumpkin puree, cinnamon, ginger, nutmeg, and cloves. Whisk constantly for 2-3 minutes to ‘bloom’ the spices until fragrant and thick.
- Slowly pour in the milk while whisking continuously to prevent lumps. Add the maple syrup. Continue whisking as the mixture heats until smooth and creamy, about 5-7 minutes. Do not let it boil vigorously.
- Brew 1/2 cup of strong coffee or espresso. Once the pumpkin mixture is hot, remove from heat and whisk in the coffee.
- Taste and adjust sweetness or spice if needed. Pour into mugs and top with whipped cream and a sprinkle of cinnamon if desired.
Notes
If using canned pumpkin puree, skip the roasting step. Ensure spices are fresh for best flavor. The pumpkin-spice base can be stored in the fridge for up to 5 days; add fresh coffee when ready to serve. Do not freeze the latte with coffee added.
