  • 3 limes (juiced and zested)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 bunch fresh cilantro, chopped
  • 2 cans (15 oz each) black beans, low sodium
  • 1.5 cups shredded Mexican cheese blend
  • Salt and pepper to taste
  • Red onion, diced
  • Tomatoes, diced
  • Lettuce, chopped (optional)
  • Avocado, sliced (optional)

Instructions

  1. Slice chicken breasts into 1-inch thick strips.
  2. In a large bowl, whisk together minced chipotle peppers, adobo sauce, cumin, chili powder, garlic powder, salt, pepper, lime zest, and oil.
  3. Add chicken strips to the marinade and toss to coat. Let marinate for at least 15 minutes (up to 4 hours).
  4. Rinse rice until water runs clear. In a medium pot, combine rice, 2 cups water, and a pinch of salt. Bring to a boil, reduce heat to low, cover, and simmer for 15-18 minutes. Remove from heat and let sit covered for 5 minutes. Fluff with a fork and stir in half the cilantro.
  5. Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper.
  6. Spread marinated chicken in a single layer on the sheet pan. Bake for 12-15 minutes, flipping halfway, until internal temperature reaches 165°F.
  7. While chicken cooks, rinse and drain black beans. Dice red onion and tomatoes.
  8. Assemble bowls by layering rice, chicken, beans, corn, and veggies in meal prep containers. Keep cheese and avocado separate or add before eating.
  9. Store in airtight containers in the fridge for up to 4 days or freeze for up to 3 months.

Let rice cool completely before packing to prevent sogginess. If using avocado, slice fresh before eating to prevent browning. For spicy adjustments, remove seeds from chipotle peppers or use only one pepper for mild heat. Ensure chili powder is fresh for best flavor.
