A refreshing, thick, and icy pink slush made with just frozen strawberries, fresh lemon juice, and a sweetener. This simple 5-minute recipe requires no fancy equipment and is perfect for hot summer days.
Ingredients
- 2 cups (300g) frozen strawberries
- 1/2 cup (120ml) fresh lemon juice
- 1/4 to 1/2 cup (60-120ml) sweetener (simple syrup, honey, agave, or sugar)
- 1 cup (100g) ice (optional, if berries aren’t frozen solid)
- 2–3 tablespoons (30-45ml) water (as needed for consistency)
- Fresh mint leaves, lemon wheel, or whole strawberries for garnish (optional)
Instructions
- Prep the berries: If using fresh strawberries, wash, hull, and freeze them on a baking sheet for at least 4 hours or overnight until solid. If using store-bought frozen strawberries, break apart any clumps.
- Measure liquids: Squeeze lemons to get 1/2 cup of juice. Measure out your chosen sweetener.
- Mash or blend: For a rustic slush, place frozen strawberries in a large bowl, pour in lemon juice and sweetener, and mash with a sturdy spoon or potato masher until combined. Add a splash of water if too thick. For a smooth slush, combine ingredients in a blender and pulse until smooth, adding water one tablespoon at a time if needed.
- Taste and adjust: Taste the mixture. Add more sweetener if too tart, more lemon if too sweet, or more water/ice if too thick.
- Serve immediately: Pour or scoop into chilled glasses. Garnish with mint or lemon. Drink right away as it melts quickly.
Notes
For best results, ensure strawberries are frozen solid to achieve a thick slush texture rather than a juice. Simple syrup is recommended over granulated sugar to prevent grittiness. Serve in chilled glasses to keep the slush cold longer. This recipe can be easily adapted with alcohol (vodka, gin, rum) for an adult version.
