Description
A refreshing summer drink combining bright lemon, sweet blueberries, and floral lavender. This sophisticated yet easy-to-make lemonade is perfect for hot days and gatherings.

- 2 cups (300g) blueberries (fresh or frozen)
- 2 tablespoons (6g) dried culinary lavender
- 1 cup (200g) granulated sugar
- 1 cup (240ml) water
- 6–8 medium lemons (yielding approx. 1 cup juice)
- 4–6 cups (1–1.5 liters) ice water
- 1–2 cups (240-480ml) sparkling water (optional)
- Pinch of salt (optional)
Instructions
- In a medium saucepan, combine blueberries, sugar, water, and dried lavender. Stir to combine.
- Place over medium-high heat and bring to a boil. Once boiling, reduce heat to medium-low and simmer for 5-7 minutes until berries burst and mixture turns deep purple.
- Remove from heat and let steep for 5 minutes to infuse flavor without becoming bitter.
- Strain the mixture through a fine-mesh sieve into a bowl, pressing on berries to extract juice but discarding solids and lavender buds. Let syrup cool to room temperature.
- While syrup cools, roll lemons on counter to soften, then juice them to yield about 1 cup of fresh lemon juice. Strain to remove seeds.
- In a large pitcher, combine cooled blueberry lavender syrup and fresh lemon juice.
- Add 4 cups of ice water and stir. Taste and adjust sweetness or tartness by adding more syrup or water as needed.
- Serve over ice. Add sparkling water just before serving if desired. Garnish with fresh blueberries, mint, or lemon wheels.
Notes
Do not over-steep the lavender as it can taste soapy. Ensure the syrup is completely cool before mixing with ice water to prevent dilution. The syrup can be made up to a week in advance and stored in the fridge. For a low-sugar version, substitute with honey or agave nectar.
