Chewy White Chocolate Macadamia Cookies

  • Author: Miranda
  • Total Time: 30 minutes
  • Yield: 20 cookies 1x

Description

Soft, chewy cookies with crisp edges, featuring a rich combination of white chocolate chips and toasted macadamia nuts. This easy one-bowl recipe guarantees restaurant-quality flavor and texture.

Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened to room temperature
  • 1 cup (200g) packed light brown sugar
  • 1/2 cup (100g) granulated white sugar
  • 2 large eggs
  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups (340g) high-quality white chocolate chips
  • 1 1/2 cups (170g) macadamia nuts, chopped and toasted

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Toast macadamia nuts in a dry skillet over medium heat for 3-5 minutes until fragrant. Let cool completely.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and white sugar until pale and fluffy (about 2-3 minutes).
  4. Add eggs, egg yolk, and vanilla extract one at a time, mixing well after each addition.
  5. In a separate bowl, whisk together flour, baking soda, and salt.
  6. Add dry ingredients to the wet mixture and mix on low speed or stir by hand just until flour disappears.
  7. Gently fold in white chocolate chips and toasted macadamia nuts.
  8. Chill dough for at least 30 minutes (or up to 24 hours) for best texture.
  9. Scoop dough balls (about 2 tablespoons each) onto prepared baking sheets, spacing 2 inches apart.
  10. Bake for 10-12 minutes until edges are lightly golden but centers still look soft.
  11. Let cookies sit on the baking sheet for 5 minutes to set, then transfer to a wire rack to cool completely.

Notes

Ensure butter is softened, not melted, to maintain chewiness. Toasting the nuts enhances flavor. Do not overbake; cookies continue to cook on the hot pan. For extra chewiness, chill the dough overnight.
