Instructions
- Brown the butter: Melt butter in a light-colored saucepan over medium heat. Stir constantly until it foams, crackles, and develops a nutty aroma with brown bits at the bottom (about 5-7 minutes). Immediately remove from heat and pour into a heatproof bowl. Cool for 15 minutes until warm but not hot.
- Mix wet ingredients: Whisk the cooled brown butter into granulated and brown sugars until smooth and glossy. Add eggs and egg yolk one at a time, whisking well after each addition. Stir in vanilla extract.
- Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, and salt.
- Make the dough: Gradually add dry ingredients to the wet mixture. Mix on low speed or with a wooden spoon just until flour disappears. Do not overmix. Fold in chocolate chips by hand.
- Chill the dough: Refrigerate dough for at least 30 minutes (or up to 24 hours) to prevent spreading and enhance flavor.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Scoop dough balls onto sheets, spacing them 2 inches apart.
- Bake for 12-14 minutes. Pull cookies out when edges are golden brown but centers still look slightly soft and underbaked.
