Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg until no lumps remain.
- In a separate medium bowl, whisk the vegetable oil, granulated sugar, brown sugar, egg, and vanilla extract until smooth and slightly glossy.
- Add the pumpkin puree to the wet ingredients and whisk until fully incorporated.
- Pour the wet mixture into the dry ingredients and fold together with a spatula or wooden spoon until the flour just disappears. Do not overmix.
- Stir in the chocolate chips.
- Scoop dough onto the prepared baking sheet, spacing balls about 2 inches apart.
- Bake for 12-14 minutes until edges are set and lightly golden, but centers remain slightly soft.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For best texture, chill the dough for 30 minutes before baking. Store baked cookies in an airtight container with a slice of bread to keep them soft. Raw dough freezes better than baked cookies; scoop dough balls and freeze on a tray before transferring to a bag.
