Instructions

  1. Brown 115g of butter in a saucepan over medium heat until nutty and brown bits form (5-7 minutes). Pour into a heatproof bowl and cool until just warm (about 20 minutes).
  2. In a large bowl, combine the cooled browned butter, remaining 115g softened butter, brown sugar, and white sugar. Beat on medium-high speed for 3-4 minutes until pale and fluffy.
  3. Add the whole egg, egg yolk, and vanilla extract. Mix until just combined, scraping down the sides of the bowl.
  4. In a separate small bowl, whisk together the flour, baking soda, and salt.
  5. Add dry ingredients to the wet mixture and mix on low speed until just combined. Do not overmix.
  6. Fold in the chocolate chips/chunks by hand with a spatula.
  7. Cover the bowl tightly and refrigerate the dough for at least 24 hours (up to 72 hours) to develop flavor and prevent spreading.
  8. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
