  • ½ teaspoon ground nutmeg
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • 1 ½ cups (360ml) milk (whole, buttermilk, or dairy-free alternative)
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • Optional: ½ cup walnuts or pecans, ½ cup chopped dates or raisins, 1 tablespoon chia seeds

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
  2. Peel, core, and dice the apples into ½-inch cubes. Place them in a large mixing bowl. Add optional nuts or dried fruit if using.
  3. In a separate bowl, whisk together the melted butter, maple syrup, eggs, milk, vanilla extract, cinnamon, nutmeg, salt, and baking powder until smooth.
  4. Pour the wet mixture over the apples. Add the rolled oats and stir until the oats are evenly coated and apples are submerged.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake for 45-50 minutes, or until the top is golden brown, edges are bubbling, and the center is set. Tent with foil if browning too quickly.

Do not use instant or steel-cut oats; old-fashioned rolled oats are required for the correct texture. Use firm apples like Granny Smith or Honeycrisp to prevent mushiness.
